It is considered to be one of the best picual varieties in Spain. Zumo has an emerald green colour. It has a medium-high fruitiness, with touches of freshly cut grass, tomato and artichoke.
On the palate it offers an explosion of aromas with an invading oiliness; the green touches are stressed and remain, together with a bitterness and a high but pleasant spicy flavour.
It is perfect for white fish, salads and red meat, but above all with a good slice of bread with tomato and some cured Iberian ham.
